Million Dollar Pickles
When I was teaching at Oregon State, I enjoyed eating in a small tea room that was about a 15 minute drive from Corvallis. The tea room was run by two little old ladies in the front part of their home. They were selling this recipe for 25 cents in order to buy War Bonds - World War II.
In a large pot put 6 quarts cucumbers, peeled and sliced. Add 1 cup salt. Soak for 3 hours in water to cover, Drain. Then add the following ingredients:
12 onions, sliced
3 green peppers, sliced
2 small cans pimento
6 cups sugar
1 tablespoon tumeric
1 tablespoon celery seed
1 1/2 quarts vinegar
Cook until tender. Add 2 cups flour, dissolved in water to thicken. Put in jars while hot.
